Rustic Pear Tart

The easiest way to make an amazing rustic dessert people will love.

I will put links to the making of this tart at the bottom of this post.

Here’s the deal, we are all swamped with stuff to do and we see those pears that we slammed in the fridge in the hopes to slow their decay till we could get to them. Got 30 minutes? Let’s get em out and make a tart.

For this we will be using fresh ground soft white wheat berries ground into flour. Don’t have any? Go ahead and use whole wheat crust, or all purpose flour. 

We will also be using Tallow.. if you don’t have any go ahead and use lard or butter instead.

Set the oven to 450 degrees.

In a bowl combine the following:

  • 1 1/4 cup Fresh Ground Soft White Wheat Flour
  • 1/4 teaspoon Salt

Stir Flour and salt to combine then add in:

  • 2 Tablespoon Cold Butter Cut up in small chunks
  • 1 1/5 Ounces Cold Tallow (which is 3 Tablespoons but easier to measure by weight)

Use a hand held pastry blender or a fork to combine till the butter and tallow are small pieces mixed within. Then add:

  • 6-8 Tablespoons of Cold Water.

Add the water in 1 tablespoon at a time. I personally dump in 6 then gently mix and add in 1 at a time till it comes together loosely. You are trying to make a pie crust so don’t overwork it.

Put the dough on a floured silpat and roll out into a rough shaped pie crust. 

Stick this in the fridge to keep warm while you work part 2:

Part 2

In a bowl (I use the same one I just made the pie crust in. Because let’s face it… No one is going to know), add the following ingredients:

  • 3-4 Pears (pealed, cored and chopped or sliced)
  • 1/2 cup Sugar
  • 3 Tablespoon Soft White Wheat Flour

Toss to combine and take out your pie crust and pile up in the middle, leaving a 2-3 inch edge. Take the edges of the crust and fold it over on top of the pears. Trying to create a completely sealed tart. Any weak parts or whole will ooze out the sweet syrup magic that will occur in the baking. 

Sprinkle the top with 2 tablespoon of sugar. (Optional)

Place in the preheated oven… (450) and bake for 15-25 minutes. Just until golden brown and beautiful.

Pull out and let cool… if you can. If you can, you are a much better person than I am! 

Once it’s cooled it can be transferred to a serving plate. This rustic beauty will be the star of the show. And the fresh ground wheat contains all the healthy benefits and the Tallow adds a unique flavor many love but can’t quite place.
