
Those of you that follow me on TikTok know that I have a brewer friend named Bob that is teaching me how to make apple cider vinegar from the apples I grew. While we are in the process and I will link some of the videos below what we are working with today is the apple discards. The pulp from the apple that people usually throw away.
This pulp is full of fiber and fermentation goodness and some alcohol. I have been experimenting and it makes a great quick bread. and… as you will see in part 2 of this experiment it makes something else that I no longer buy at Trader Joes. Bonus.. So.. let’s catch you up!

So now what do I do with all the apple pulp?
We make it into a bread…

Turn your oven on to 350 to preheat and add the following:
- 2 cups fresh milled soft white wheat
- 2 tsp Baking Soda
- 1 tsp Salt
- 1/3 cup Sugar
- 1/3 Cup Rolled Oats
- 1 tsp Cinnamon
- 1/3 tsp Nutmeg
- 1/4 Cup Sunflower Seeds
- 1/2 Cup Dried Cranberries
- 1/3 Cup Pumpkin Seeds
- 1/3 Cup Pecans
- 1/8 Cup Flax Seeds
- 1/3 Cup Bran Flakes (Optional)
Stir to combine and mix in the rest of the ingredients:
- 1 1/2 Cups Apple Discards
- 1 Egg (Optional)
Stir till all incorporated.
Grease small loaf pans and fill to be half full or as desired.
Bake for 20 minutes in a 350′ oven. Remove and let cool then slice and eat…
