Baking With Grapefruit

I was given 3 grapefruits and I wanted to challenge myself to use them. But not just eat them. I wanted to see how much of the grapefruit I could use and what I could make with them. 

In years past I actually canned up a whole bunch of grapefruit with lavender in a low sugar syrup and it was delicious. But I didn’t really have enough grapefruits to get all the canners and jars and stuff out! So let’s see what I made with it all…

First up was Shortbread grapefruit bars. We actually liked them way better then my old tried and true lemon bar recipe. You can see the note my husband left me on the recipe. 

So that’s a win right there!

I did however leave the powdered sugar dusting off at the end. No one knew anything was missing.

Next up was a Glazed Grapefruit Bundt Cake. Now, I liked the recipe. The alterations I did was use whole wheat fresh ground flour and coconut oil instead of vegetable oil. We also sprinkled coconut over the top because it was calling my name. Well… It was slightly heavier then it would have been if I used the all purpose flour. But it was sugary sweet and good. I did put the glaze on it… and… It didn’t need it! At all! But, we ate it.

Now at this point I am sick of anything grapefruit. Honestly we don’t eat that many sweets these days and I am tuckered out of baking. But… I still have grapefruit left so lets keep going…

Grapefruit Scones are next on the list. You can find the recipe here: https://loveinmyoven.com/glazed-grapefruit-scones/ The alerations I made to it was just exchanging the flour from all purpose to fresh milled whole wheat. It did need more flour by about 1/3 of a cup. But Soft white wheat is notorious for being like that. I just baked them as is… and they tasted very good. 

Honestly, I won’t make them again. While they were good.. they are not my favorite. And it might have to do with the fact that I live at the 45th parallel and grapefruits don’t knock on my door every day. 

It was a fun recipe to try however. 

I still had grapefruit juice and zest left over… So after pulling out my hair.. just kidding, I decided to use the rest combined with some lemon juice and make some more grapefruit lemon bars. Now you can tell when a recipe is good when you make it a second time even when you don’t have to. 

Throughout this whole experiment I was floored that there were so many recipes for grapefruit. To be honest, and I don’t know why, I thought it was just good for eating at breakfast with brown sugar sprinkled on top.
